1970 Braised Drumsticks

还记得1970 年代,外婆在大日子时会煮卤鸡。不知为什么, 其他菜肴已煮好准备开饭,只有卤鸡还不够软烂。全家人都会很期待那又香又够味的卤鸡卤蛋 Cindy, Eugene 不太喜欢含有骨头的料理。为了满足他们, 我用了 chicken drumstick 耒取代 whole chicken。希望孩子们能够多吃一些。相信这也是每个妈妈的心愿吧!

Reminiscing year 1970, i remember how my grandma used to cook braised chicken every festive season. Not quite sure then why all the dishes were always ready to be served, except for this braise. The whole family will be anticipating for that fragrant, delicious braised chicken with eggs. Cindy and Eugene are not fans of meals with bones. To please them, i used chicken drumstick to replace the whole chicken; with hope that my children will eat more. i believe this is the wish of every mother!

材料 / Ingredient: (Serves 3 – 4)


6 chicken drumsticks
6 boiled eggs
4 whole / 40 pips garlic


Chicken marinade:
1T soy sauce
1/2T dark soy sauce
1/4t five spice powder


1 star anise
2 inches cinnamon stick


1/2T tauchu
3T soy sauce
1T dark soy sauce
6 pieces rock sugar
2.5 – 3 cups boiling water


做法 / Method:

  1. Pat dry chicken drumsticks. Prick them with a fork. Massage chicken with marinade sauce.
  2. Heat up 2T oil. Pan fry drumsticks 1 minute for each sides. Remove and set aside.
  3. Pour 1T oil. Saute garlic and spices till fragrant, followed by tauchu and rock sugar. Stir fry for a while.
  4. Add in seasoning and drumsticks. Once all the drumsticks are coated with seasoning, pour in boiling water. Bring to a boil, cover, and simmer with medium heat for 30 minutes.
  5. Add in boiled eggs and continue to simmer for an extra 15 to 20 minutes.


p.s. Use boiling water as this helps chicken to cook faster. Water should ONLY cover 2/3 of the chicken.

p.p.s. Make sure to use medium heat to simmer. (Refer: Step 4)
