Tortilla de frijoles y cebolla tierna


I’ve learned that Catalonians love their eggs, especially in the form of tortillas, or omelets. They make tortillas with everything and anything, including beans as in this hearty version. José Andrés uses Catalan beans called montgetes but since I couldn’t find them, I attempted these beautiful butter beans as replacement instead; and it got me close to heaven. I never knew how extra-ordinary beans and eggs can be, until I tried this recipe. All you need are these ingredients below. P.S. Fry the beans first below topping them on the omelet!
