My daughter loves tomatoes (very) much. As long as there are tomatoes in a dish, she will absolutely adore it. i remember when she was a child whenever we went for our road trip i would cook ‘flying shrimps’; nicely packed in a lunch box so that she could slowly enjoy her meal in the car. Ingredients here are all round and bite-sized, look good, taste good, and not troublesome at all. Feels a bit like an airplane meal too!
材料 / Ingredient : (Serves 2)
1 small bombay onion (chopped)
1/2 cup button mushrooms
1/2 cup carrots + 1/4 salt
200g medium shrimps
2 big tomatoes (diced)
1/2T chopped ginger
1T chopped garlic
1T plain flour
1T olive oil
1T butter
Prawn Marinade:
1T egg white
1t plain flour
1/8t pepper
1/8t salt
Seasoning:
3T tomato sauce
1T soy sauce
1/2T sugar
1t vinegar
3T water
1/4t salt
1t Shao Hsing wine
Mix all of the above.
做法 / Method :
Heat wok with 1T olive oil. Stir fry bombay onion until soft followed by ginger and garlic, then remove and set aside.
Using the same wok, add in 1t oil and pan fry prawns. Pour in Shao Hsing wine. Cover with a lid for about 30 seconds. Remove.
Stir fry carrots followed by button mushrooms and tomatoes.
Add in ingredients from (1). Sprinkle with plain flour and add in seasoning.
