Aubergines when pan fried taste pretty good. My daughter who’s afraid of oily food loves eggplant. This dish of roasted prawns with aubergines is two thumbs up, super easy to cook, nutritious and wholesome.
In order to fill her up more, i (only) give her 40g of pasta. More good stuff, less carbs; makes eating happier!
材料 & 做法 / Ingredient & Method: (Serves 2)
PART 1 : PRAWNS
De-vain, pat dry, arrange on non-stick pan. Put garlic butter* on prawns, heat pan (medium heat), cover and cook for 3 minutes.
2T soft butter
1/2T garlic puree
1/4t Italian herbs, paprika, parsley, black pepper
1t lemon juice
PART 2 : AUBERGINE
Sliced 1cm thick, coat with seasoning*, set aside for half an hour. Pan fry with 1T olive oil for 1 minute on each side. Cover pan for best results.
1/2t black pepper
1T coarse chili powder
1T plain flour
PART 3 : PASTA
Boil with salt and olive oil for about 10 – 12 minutes.Drain and mix with Aglio Olio mixture*.
*Aglio Olio mixture:
2T bombay onion
1/2T chopped garlic
1 red chili
1 green chili
Salt and pepper to taste.
Saute with 1T olive oil.
Arrange prawns, aubergine, pasta on a plate and garnish with fresh herbs of your choice. Done!
