Sofrito

Sofrito, or better known as a Catalan tomato and onion sauce, is used in countless Spanish dishes and recipes. Recently, i made my first batch of Sofrito for arroces (a dish which i’ll blog about after). The successful attempt reflected beautifully on the next serving i specially cooked for my dear mother; which of course, made her proud. Here you’ll see how the tomatoes change from a fruit, to a fantastic tasty sauce. Too bad you can’t taste it! 😛
