Ensalada murciana con queso

This salad, inspired from the Jumilla region in Murcia has become an instant favorite in my family. The combination of (beefsteak and plum) tomatoes fillets + delicious, light, creamy cheese, drizzled with a flavorful dressing and delightful garnish of herbs & olives makes it ever more wonderful. The best part is, it only takes a couple of brief minutes to prepare! My parents love it, see if yours will too. 😉
