Greek-Inspired Zucchini Pancakes

This is the first dish @ Cin City that is not from José Andrés, but a random yet refreshing video i stumbled upon YouTube’s eHow by Louisa Shafia (recipe and methods ). i must say that it was the most revitalizing and tranquilized cooking process i ever had. It is a promise that you will immediately diminish any doubts that i was exaggerating once you get your hands on grating those juicy green zucchinis. The creamy cheese and crunchy nuts combined with the freshness of mint and fragrant scallions simply take your everyday pancakes up a notch! The most invigorating experience was still the fact that i drank the grated zucchini juice instead of pouring them down the drain; which rejuvenated my whole body like never before.
