Paella de verduras

i’m always challenged when it comes to finding vegetables on the menus in Spanish restaurants, until this beautiful paella dish proved me wrong. The many regions of Spain produce astonishing vegetables at the peak of their season, and you’ll see these colorful harvests everywhere in Spanish markets; but when it comes to the menu, where do they go? This dish that i cooked over the weekend suggests that i was looking at the wrong parts of the menus. That, or perhaps the only place you can get this is from my Malaysian kitchen… if not Spain. 😛
