Pollo al chilindrón

My favorite dish is non other than a good stew and this wonderful chilindrón recipe from José Andrés does just that. According to my cookbook, chilindrón is a vegetable stew that comes from Aragón, where they grow astonishing vegetables in the fertile land near the Ebro River. Although my ingredients are from a local supermarket, when cooked slow, the sweetness from the onions, peppers, and pimentón makes this traditional dish memorable; which makes it great for a family dinner. Hence, i invited my brother over to enjoy this homemade stew together at a|x’s.
