Tostada de Queso

The first time i had this classic tapas was at a Spanish bar named Pinchos. The first time i saw how it’s made, was by the pool at Humberto’s party. The difference is the topping but the process, is the same. i still remember the shock i had, seeing everyone rubbing their tomatoes vigorously on their baguettes. Now that i get the secret trick, this tomato toast has become one of my favorite snacks to make at home. In this version, i used a slightly nutty cheese (because it is impossible to find good jamón in Malaysia) that tastes amazing. Inspired by José Andrés and my Spanish friends, this snack is one part tradition and one part imagination.
